Easy microwave recipes for the lazy foodie

Are you a terrible cook or simply lazy? Either problem have one simple solution – easy microwave recipes! They take less than an hour, sometimes minutes to cook and you don’t even have to do most of the cooking.

Here are some easy-to-cook recipes in your microwave!

Baked Potatoes

What you need: Russet potatoes, olive oil, salt, and pepper.

Prep and cook time: 20 minutes

How to make:

  • Wash and scrub the potatoes in running water and pat them until fully dry.
  • Remove any blemishes.
  • Take a fork and poke each potato 4-5 times on both sides so steam can escape when being baked.
  • Dab olive oil over all potatoes and sprinkle with salt and pepper.
  • Put them in a microwave-safe dish and leave it on for 5 minutes in highest power.
  • Flip the potatoes to the other side and cook for another 3-4 minutes until the fork can penetrate the potato all the way till the centre.

Bonus: If you want to turn this into crispy potato skins, place them in an oven at 425o.

Paneer Tikka

What you need: 1 kg paneer cubes, 2 table spoons each of garlic paste, ginger paste, and chilli paste, 1 table spoon each of chaat masala, powdered black pepper, and salt, a few red colour drops, 3 table spoons of vinegar, 1 lemon (quartered), oil for brushing, 1 onion for garnish (sliced into rings).

Prep and cook time: 40 minutes

How to make:

  • Take the paneer cubes and mix all masalas together and leave it for 30 minutes to set.
  • Grease a small plate (like a saucer) and place it in a bigger plate.
  • Place the paneer cubes around the edges, place it in the microwave under high heat for 4 minutes.
  • Turn the cubes over, brush them with oil and turn on the microwave for another 4 minutes.
  • Garnish with onion rings and serve.

Andhra Chilli Omelette

What you need: 2 eggs, 2 table spoons of water, a dash of pepper, 2 Andhra chillis, cooking oil/butter, cooking spray, 1/8th table spoon of salt (optional), and plastic wrap.

Prep and cook time: 15 minutes

How to make:

  • Take a 9-inch pie plate and heat the butter for 45 seconds on high power until it melts. Tilt the plate so the butter spreads out evenly on the plate. Keep it aside.
  • Take a small bowl, beat the eggs together with water, Andhra chilli, pepper, and salt, until it blends. Pour it in the hot plate. Cover the plate tightly with a plastic wrap.
  • Turn the microwave to high heat and cook for 3 minutes. Rotate the plate 1/4th every 30 seconds. Do not stir the plate.
  • Wait until the top has thickened and there is no visible liquid egg seen.
  • Turn/fold/slide the omelette into your serving plate.

 These ingredients are easily available in all kitchens, so you don’t have to run out and get anything, especially if you’re lazy! And if you don’t have a microwave in your kitchen or cannot afford one right now, you can easily get microwaves on rent online!
