When people think of Hyderabadi cuisine, the first dish that comes to mind is typically the iconic biryani, a must-try for every visitor. However, Hyderabad offers much more than just biryani, with a culinary scene steeped in royal history and diverse influences, from Persian and Arabic to Turkish and South Indian. Recently, the city made its mark in Taste Atlas’ 100 Best Food Cities in the World ranking, coming in at the 50th spot. If you’re a foodie, here are a few dishes to savor in Hyderabad:
- Hyderabadi Biryani at Shadab Hotel: This legendary biryani features fragrant basmati rice, tender meat, saffron, yogurt, and a blend of spices. Shadab, founded in 1954, has become a culinary landmark. The unique dum cooking method, which cooks raw rice and meat together, gives rise to two versions: kachchi (raw) and pakki (cooked).
- Chakna at Tawakkal Pasha Hotel: A must-try stew, chakna is made from goat tripe and offal cuts like liver, kidneys, and intestines, cooked with spices like cardamom and garam masala. Tawakkal Pasha has been serving this bold dish since 1970, cherished by both Indians and Pakistanis.
- Mutton Marag at Chicha’s: A traditional meat stew, this dish features tender mutton simmered in Indian spices and is often served at Hyderabadi weddings. Chicha’s in Lakdikapul is famed for its aromatic and rich mutton marag, paired with dill naan.
- Khubani ka Meetha at Cafe Bahar: A Hyderabadi dessert made from dried apricots, sugar syrup, and garnished with almonds and cream. Served at Cafe Bahar in Himayath Nagar, this delicacy is the perfect sweet finish to any meal.
- Haleem at Shah Ghouse: A rich stew made from wheat, barley, meat, and lentils, Shah Ghouse’s haleem is a Hyderabadi favorite, especially during haleem season, and is topped with crispy fried onions and fresh coriander.
Each dish tells a story of Hyderabad’s rich culinary heritage and is a must-try for food lovers.
