Kuswar, the taste of Kodial that makes Christmas delightful

Mangaluru: Christian families all over the world have been known for their delicacies for a number of festivals including Thanksgiving and Christmas. In Mangaluru, Catholics celebrate Christmas with an entirely different array of sweets unlike any other part of India. 

‘Kuswar’ as it is known, is a collective word for all the Mangalorean Christmas sweets which usually makes all Mangaloreans wait for their Catholic neighbor bring them some. Kuswar consists of Nevryo, Kideo, Gulio, Kokkisan, Tukdi, Rice laddu and cakes.

Since Christmas is a festival of the joy of giving, Mangalorean Christian families ardently follow the rule of ‘Love Thy Neighbour’ as Jesus had preached. As the Christmas day approaches, Christian households are seen making kuswar and distributing it to their neighbouring houses to spread the joy of Christmas.

Apart from the home made Kuswar platter, several bakeries in Mangaluru make Kuswar every year and see a great boom in their sales until New Year. Bakeries like Konkan Traders and Vaz Bakery go double time in production of Christmas sweets and the aroma of the sweets certainly leads several passerbys directly into the shop. Most of the supermarkets in the city have also been putting Kuswar on their shelves way before Christmas season even begun.

 

What’s on the Kuswar Platter?

Kidiyos – Slightly sweetened dough curls that are rolled on sugar icing to make an irresistible condiment. It is crunchy and not too sweet.

Guliyos – Tiny fried rice marbles, resembling a cannon ball. It is hard and tough to bite, but gives a great aftertaste.

Nevriyos – Sweet puffs coated with crunchy wheat layer. They have a sweet filling of til and grated coconut.

Kokkisans – These are fried cookies. Not sweet but a great snack.

Rice Laddus – They are laddus made of rice. The strong til flavor definitely makes it a hard to resist delicacy.

Cakes – Plum cakes are the speciality of Christmas celebrations. Dry fruits, raisins and desiccated orange peels give a tangy flavor to the cakes.
