Ennegayi Badanekayi is one of the most famous dishes of North Karnataka. Even on festival days, there is no go without the Ennegayi. Ennegayi is mainly served with jolada rotti or chapathi.
Tasty ennegayi or stuffed brinjal is prepared using small purple brinjals, onions, coconut, peanuts, garlic, sesame seeds and many other spices added. It’s delicious to eat with jawari roti, chapathi, and huli rice among others Among all types of palya, the most delicious palya is this Ennegayi curry. As one cooks it in oil, it will not spoil even if it is kept for 2 days.
A good combination with Ennegayi curry is jawari roti, onion-tomato, sprout salad and fenugreek leaves. It is a food rich in proteins and vitamins. This is thus a super healthy combination.
