Avartana, the acclaimed fine dining restaurant from ITC Hotels, recently concluded a remarkable culinary showcase in France, bringing Southern Indian gastronomy to the heart of Champagne and Bordeaux. Their first stop was at Domaine du Chalet, a prestigious estate owned by Champagne Palmer, where their avant-garde creations were paired with some of the region’s finest handcrafted sparkling wines.

The culinary team, led by chefs Nikhil Nagpal and Satheeshwaran, wowed guests with a meticulously curated seven-course menu featuring delicacies like Lamb Congee, Spiced Pork Belly, and Fennel Pannacotta. The journey continued to Bordeaux during the globally celebrated En Primeur week, held at the iconic Château Haut-Brion. En Primeur is a unique annual gathering where connoisseurs sample Bordeaux’s latest vintages before bottling — an event rooted in tradition and excellence, perfectly complementing Avartana’s innovative cuisine.

Ganesh Kuppusami, F&B Manager at ITC Grand Chola, orchestrated the service alongside Sonary’s team, delivering a warm and seamless experience. Guests were welcomed with one of Avartana’s signature inventions — triple-distilled rasam served stylishly in a French press.

This initiative marks a new chapter in ITC Hotels’ global aspirations. After multiple awards and recognitions, including India’s No.1 restaurant title and a place on Asia’s 50 Best list, Avartana is now elevating its presence internationally. With this France tour, ITC Hotels aims to introduce their unique, contemporary take on Southern Indian cuisine to the global culinary scene.
