Indian-American author and former model, Padma Lakshmi, known for her love of food, has shared another mouth-watering recipe on Instagram. This time, it’s a dish close to her Indian roots—Manga Curry, a popular condiment from Tamil Nadu.

Manga Curry, also known as Mango Curry, has a unique twist in Padma’s version. Instead of using the usual tender green mangoes, she opts for unripe mangoes, which gives the dish a satisfying crunch. The recipe is simple and quick to make, and Padma has generously shared it with her followers.

Padma Lakshmi’s Manga Curry Recipe

Ingredients:

  • Green mango (preferably unripe)
  • Kashmiri chili powder
  • Salt
  • Neutral oil
  • Black mustard seeds
  • Asafoetida
  • Curry leaves

Method:

  1. Peel and chop the green mangoes (unripe for a crunchy texture) into small pieces.
  2. Add Kashmiri chili powder and salt to the chopped mangoes.
  3. Heat neutral oil in a pan and prepare a tadka by adding black mustard seeds, a pinch of asafoetida, and curry leaves.
  4. Pour the tadka over the mango mixture and give it a good stir.

While the dish is ready, Padma suggests letting it rest for a few hours to allow the flavors to meld together, making it the perfect accompaniment to any meal.
