The Kannur Jail Biryani, featured at the Taj Bekal Resort, pays homage to a notable Kerala government initiative called “Food for Freedom.” Launched in 2010, this program transformed Kerala’s jails into correction centers with modern kitchens where inmates were trained and compensated for preparing food sold to the public. By 2012, Kannur Central Prison joined the program, contributing to its success and earning significant revenue.

The Biryani Experience: Chef Anbalagan Kesavapillai of Taj Bekal Resort brings the Kannur Jail Biryani to guests, using the region’s beloved Jeerakasala rice. The dish is notable for its rich flavor, achieved by frying onions to a crispy brown and incorporating a blend of spices and ingredients.

Recipe Highlights:

  • Ingredients: Chicken, Jeerakasala rice, onions, tomatoes, green chilies, ginger, garlic, coriander leaves, mint, turmeric powder, chili powder, curd, ghee, refined oil, and spices (cinnamon, cardamom, cloves, bay leaf).
  • Method: Marinate chicken, cook with spices, and layer with parboiled rice. Finish with a dum cook for 10-15 minutes.
  • Accompaniments: Homemade lime pickle and Kerala-style onion challas (salad/raita).
