SAC holds guest talk on Climate Food Security and Health

Mangaluru: The Department of Postgraduate Studies and Research in Chemistry along with the Undergraduate Department of Food Science, and Entrepreneurship and Consultancy Cell of St Aloysius College (Autonomous), organised a guest talk on the topic “Advancing Climate Resilient Food Security and Health” on 12 Oct at LF Rasquinha Hall.

Two eminent scientists, Dr Kalidas Shetty and Dr Gregory Peter Lardy from North Dakota State University, USA were the resource persons.

Dr Kalidas Shetty is the Founding Director, Global Institute of Food Security & International Agriculture, Professor of Plant Science and associate Vice President for International Partnerships and Collaborations at North Dakota State University, USA. He emphasized the importance of carbon in both the atmosphere as carbon dioxide and in the human body as carbohydrates. He advocated for a balanced and sustainable approach to both carbon in the environment and in our diet. He highlighted the role of carbon dioxide in the atmosphere as a greenhouse gas, emphasizing the need to mitigate excessive carbon emissions to combat climate change and enhance climate resilience. Dr Kalidas also drew attention to the significance of carbon in the form of carbohydrates in our bodies, underlining the necessity of a balanced carbohydrate intake.

Dr Kalidas was against the consumption of diets rich in simple or refined carbohydrates that could lead to metabolic imbalances within the body. Instead, he promoted a diet rich in fibre, which can help regulate metabolism and maintain a healthier balance. A fibre-rich diet is known to have several health benefits, including aiding digestion, managing blood sugar levels, and promoting overall well-being. This approach aligns with both individual health goals and the broader goal of sustainability and environmental consciousness.

Dr Gregory Peter Lardy, Dean of College, Agriculture, Food Systems and Natural Resources, North Dakota State University, USA was the guest of honour. He addressed the students and delivered a motivating speech. He likely emphasized the importance of agriculture, food systems, and natural resources in today’s world and encouraged the students to pursue careers and studies in these vital fields.

Dr Lardy highlighted the significance of sustainable agriculture, responsible food production, and efficient utilization of natural resources to ensure a sustainable and secure future for humanity. He also encouraged students to explore innovative approaches, research, and technologies that can contribute to the betterment of these sectors. Dean Lardy emphasized the role of education, research, and collaboration in advancing agricultural practices and food security globally. He also motivated the students to become future leaders and innovators in these critical areas, addressing current and future challenges in agriculture, food systems, and natural resource management.

The principal, Rev Dr Praveen Martis, SJ, Dr Alwyn D’Sa, registrar & controller of examinations, Dr Ronald Nazareth, Director of PG Sciences, Dr Adarsha Gowda, Dean of the Entrepreneurship and Consultancy Cell, and Dr Vinola Rodrigues, Head, Department of Postgraduate Studies and Research in Chemistry were present.

The talk was attended by the PG students from Chemistry, Biochemistry and Food Science along with their faculty members. The program was well appreciated by the students.
